Chicken Breakdown (March 2010)

Here are some helpful links from Paola. If you missed her class on breaking down a whole chicken (or you just need a reminder), here's a quick video on how to do it. For a more informative lesson, here's a video from some ACC chefs about all things chicken related.

Once you've got that bird cut up, here are some great ways to cook it -
Recipe for roast chicken with potatoes, lemon, and asparagus (Paola says: "I love this recipe, and its very interchangeable. Like with kale and garlic, instead of the asparagus and thyme.") Also, here's a recipe for lighter chicken pot pie.
